Rumaki chicken with maple syrup and tamari
A simple appetizer, though decadent, for lovers of bacon! These appetizers very popular during parts of 1970 will bring back people to these wonderful years. They contain fewer calories and low fat than traditional rumaki, made of chicken livers wrapped in bacon. Do not hesitate to make a substitution. Ingredients to this low fat chicken


12 slices bacon, low sodium
3/4 lb (0.4 kg) boneless, skinless chicken, cubed
1 c. tablespoon (15 ml) tamari sauce light
or
1 c. tablespoon (15 ml) soy sauce low sodium
2 c. tbsp (30 mL) maple syrup
2 c. tablespoons (30 ml) ketchup
1 c. tbsp (15 mL) chili garlic sauce
1 c. tsp (5 mL) sesame oil, smoked
1 c. tablespoon (15 ml) sesame seeds (faculative garnish)
2 green onions, medium, sliced, for garnish

  1. Preheat oven to 350 ° F (180 ° C).
  2. Preheat skillet over medium-high heat. Place the bacon flat in the pan and fry for 2 to partially and a half minutes on each side, which will remove fat, while retaining the flexibility of bacon. Make sure not to overcook it because then it could break when to coat the chicken pieces. Place bacon slices on paper towels to remove excess fat and warm them.
  3. Cut the chicken breast into cubes about 1 inch (2.5 cm) thick to obtain 24 pieces. Each breast should give about 8 cubes. If the cubes are smaller at the ends, one can use two coating when bacon. Place chicken cubes on a baking sheet.
  4. Pour tamari low-fat (or soy sauce), maple syrup, ketchup, chili garlic sauce and sesame oil on the chicken cubes. Shake the plate to coat the chicken cubes with marinade.
  5. Cut two slices of bacon pre-cooked and cooled. Use a toothpick to manipulate each cube of chicken. Coat the half-slice of bacon around a cube of chicken and fix everything with the toothpick. Replace the cube of bacon wrapped chicken in the marinade on the plate. Coat 23 rumaki other similarly. Once completed, ensure that the side where the ends of the bacon slices are is below. Arrange appetizers on the plate uniformly. Using a spoon, drizzle with marinade.
  6. Cook them in the oven for 30-40 minutes until chicken is cooked through and the bacon is golden brown.
  7. When ready to serve, remove the plate and arrange on a serving platter. Pour the cooking juices remaining on appetizers. Decorate them with toasted sesame seeds and chopped shallots (optional). The serve hot or warm.
